Recipe for my holidazzle dessert table: a lot of baking, cooling, frosting and love.

I’m not a huge sports fan but I do know that the Packers are 4-0. So I decided to show some effort as someone who now lives in Wisconsin, and make a Packer themed dessert.

My obsession with red velvet has come into play once again. This time, in the form of cake balls. Love these things! One large bite of moist red velvet cake covered in chocolate on a stick! What’s not to love? It’s also a great alternative to a messed up cake. You know what I’m talking about. Not every cake that goes in the oven turns out wonderful. Why not use your not-so-perfect cake for making cake pops?

Here’s the how to (makes 40):

Ingredients:
-One box of red velvet cake, baked and cooled (or you can make it from scratch)
-8 oz. cream cheese
-2 c. confectioners sugar
-4 Tb. butter
-1 Tb. milk
-1 bag of Wilton candy melts (green)
-1 bag of Wilton candy melts (yellow)
-Sprinkles, chopped nuts, whatever decorations you want
-40 lollipop sticks (the Wiltons and lolli sticks can be found at Michaels)

Recipe:
1) Bake the cake. Let it cool overnight or leave in the freezer for a couple hours.
2) When it’s completely cooled, crumble it into a bowl (this is the fun part) with your fingers or fork into small crumbs.
3) Mix the cream cheese, butter, powdered sugar and milk in a separate bowl until smoothed to cream cheese frosting.
4) Pour the mix into the cake crumbs and mix with a spoon, then knead with hands until evenly mixed. Make sure you can roll the cake into a ball about the size of a donut hole.
5) Cover the mix and leave in freezer for a couple hours. It needs to be cold for when you make the balls.
6) Get a large baking sheet and cover with wax paper.
7) Take cold mix and roll into donut hole sized balls and place on baking sheet
8) Pick up each cake ball and stick a lollipop stick into it.
9) Place it on baking sheet and put back in freezer so that the balls harden
10) Melt the chocolate candy melts in two separate double boilers, or microwave (just follow the direction on the bag)
11) Take each cake pop and dip into melted chocolate until entirely covered.
12) Dip it while it’s still wet into sprinkles, etc.
13) Place it on baking sheet with stick facing up (obviously). Or if you want the top to be rounded, you can put the stick end into some styrofoam.

Voila! Bona petit for game time!
